Ingredients:
1 box GOODLES Queso Tell Me More
1 tbsp butter
¼ of an onion
3 garlic cloves
¼ cup roasted hatch chili
1 roma tomato
½ cup corn
1 can evaporated milk
1 cup shredded cheddar cheese
1 tsp chili powder
1 tsp cumin
Salt & pepper to taste
¼ cup minced cilantro
1 cup shredded mozzarella
Jalapeno (optional garnish)
Tajin (optional garnish)
Chips for dipping
Instructions:
Dice your onion, and tomato. Mince the garlic and cilantro. Shred your cheddar cheese and mozzarella.
Add the butter to a pan on medium heat. Once melted add your diced onion and cook for a few minutes until softened.
Add in the minced garlic, roasted hatch chili, diced tomato, and corn. Mix well and continue cooking for 10 minutes until everything is fragrant and the tomatoes have broken down slightly.
Then add in the evaporated milk. Bring to a gentle simmer then shut off the heat. Stir in the GOODLES cheese packet and shredded cheddar cheese.
Meanwhile, begin boiling your GOODLES pasta in a separate pot.
Stir the listed seasonings, minced cilantro, and the drained cooked Goodles noodles into the queso sauce.
Pour the queso mac & cheese into a small cast iron dish, top with mozzarella and slices of jalapeno, and broil for 4-5 minutes until the top is brown and bubbly.
Top with some tajin if desired and serve warm with some chips for dipping. Enjoy!
