GOODLES Down the Hatch Huevos Rancheros Recipe

1 box GOODLES Down the Hatch Mac and Cheese - prepared according to package instructions
4 corn tortillas
1/2 cup refried beans, warmed
Pico de gallo - store bought or homemade
As you finish making the mac and cheese, bring about 1/2 inch of peanut oil to medium high heat in a large frying pan. Cook the tortillas in batches of 2 in order to not crowd the pan, on both sides until crispy. Remove from heat.
Cook the eggs in the same oil to fry and crisp up the edges of the egg whites. Season with salt and pepper while cooking.
Spread the beans over the tortillas evenly.
Plate the mac and cheese evenly on the bottom of two plates. Top with the two tortillas, then the eggs. Garnish with pico, avocado slices, and cilantro. Serve.
