GOODLES Down the Hatch Cheesy Cowboy Caviar Recipe

Takes 15 minutes

Serves 3


1 box GOODLES Down the Hatch Mac and Cheese

2 tablespoons olive oil

1/2 cup frozen corn

1/2 cup black eyed peas

1/2 cup black beans

1/4 cup milk

1/2 cup diced green bell pepper

1 jalapeno, diced

1/4 cup minced red onion

1/2 cup diced tomato

juice of 1 or 2 limes to taste

1 avocado, diced

1/4 cup chopped cilantro

Chips for serving


  1. Boil the pasta according to the package instructions. Drain and toss with the olive oil. Add in the corn and beans and toss to combine.

  2. Next add the milk and the cheese packet. Stir to combine and incorporate the powdered cheese into the mixture.

  3. Add in the bell pepper, jalapeno, tomato, and lime juice and toss.

  4. Finally add in the avocado and cilantro and toss to combine. Taste and season with salt and pepper to personal taste. Serve with chips.
