GOODLES Down the Hatch Stuffed Hatch Peppers Recipe

Takes 40 minutes

Serves 4

Ingredients:

1 box GOODLES Down the Hatch Mac and Cheese - prepared according to package instructions

4 large hatch chiles

4 slices bacon

Instructions:

  1. Preheat oven to 350

  2. Slice the hatch chiles down the center, keeping the stem, top, and bottom in-tact. Clean out the seeds and ribs.

  3. Load the chiles up evenly with the mac and cheese.

  4. Take a slice of bacon and wrap it around the chile, starting towards the tip, and spiraling it around to the stem. It should wrap 2 or three times around, and you want it to start and end on the opposite side of the pepper from the slice you made. Place the pepper down on a baking sheet, with the ends of the bacon held in place by the bottom of the pepper and the pan. Repeat with all the peppers.

  5. Bake the peppers for 25 minutes until the bacon is cooked through. Switch the oven to broil on high, and finish the peppers under the broiler to get a little charring on top. Serve.
