Yield: Serves 3 or 4
INGREDIENTS:
1 large kielbasa
1 large onion, sliced thin
3 jalapenos, sliced thin
2 tablespoons butter
1/4 cup milk
INSTRUCTIONS:
Preheat a cast iron griddle over the coals or campfire. Add some oil, and then add the kielbasa, onion, and jalapeno.
Place a skillet over the fire and add about a cup of water. Allow it to come to a simmer. Add in the pasta and cook, stirring occasionally and adding more water if needed, until the pasta is tender.
Add in the butter and milk when the pasta is about cooked and the water is mostly evaporated. Stir to combine.
Add in the cheese packet and stir until combined. If it is too wet, allow it to cook more until the liquids are evaporated.
Meanwhile, remove the kielbasa from the pan. Slice into rounds and return to the pan. Toss it with the veggies.
Top the mac and cheese skillet with the kielbasa and veggies and serve.
