Curveball 3 Cheese Lemon Pesto Pasta Salad

Ingredients:

  • 1 box GOODLES Curveballs

  • 1 ½ cup fresh basil 

  • 2 cloves garlic 

  • ¼ cup pine nuts

  • ¼ cup grated parmesan 

  • 2-3 tbsp Olive oil

  • 1 lemon, juiced 

  • ¼ cup pasta water

  • 3 cups Arugula 

  • 4 oz. Burrata 

  • 4 oz. Mozzarella (pearls or chopped)

  • Salt & pepper 

Directions:

  1. Bring a large pot of salted water to a boil. Cook GOODLES Curveballs for 9-12 minutes until al dente. Reserve 1/4 cup pasta water before straining cooked pasta. 

  2. While the pasta cooks, make the pesto. In a food processor or blender combine the fresh basil, pine nuts, garlic, parmesan, olive oil, lemon juice, and some salt and pepper until smooth. 

  3. Add the cooked pasta into a large bowl and toss with the pesto, adding a little pasta water (you may only use 1-2 tbl!) until smoothly coated. Mix in the arugula and mozzarella pearls. 

  4. Plate and serve on a large platter. Top with creamy burrata, and finish off with a drizzle of olive oil, flakey sea salt and cracked black pepper.
