Ingredients:
1 box GOODLES Curveballs
1 ½ cup fresh basil
2 cloves garlic
¼ cup pine nuts
¼ cup grated parmesan
2-3 tbsp Olive oil
1 lemon, juiced
¼ cup pasta water
3 cups Arugula
4 oz. Burrata
4 oz. Mozzarella (pearls or chopped)
Salt & pepper
Directions:
Bring a large pot of salted water to a boil. Cook GOODLES Curveballs for 9-12 minutes until al dente. Reserve 1/4 cup pasta water before straining cooked pasta.
While the pasta cooks, make the pesto. In a food processor or blender combine the fresh basil, pine nuts, garlic, parmesan, olive oil, lemon juice, and some salt and pepper until smooth.
Add the cooked pasta into a large bowl and toss with the pesto, adding a little pasta water (you may only use 1-2 tbl!) until smoothly coated. Mix in the arugula and mozzarella pearls.
Plate and serve on a large platter. Top with creamy burrata, and finish off with a drizzle of olive oil, flakey sea salt and cracked black pepper.
