Ingredients:
1 box GOODLES Loopdy-loos
1 ½ cups thawed frozen peas
¼ cup fresh basil
Zest and juice of 1 lemon
3 garlic cloves
⅛ cup olive oil
Salt & pepper (to taste)
4 slices prosciutto
¼ cup panko
Instructions:
Heat the oven to 375°F. Arrange the prosciutto on a baking sheet and bake for 12-15 minutes until crispy. Wait to cool before crumbling.
Begin by boiling your GOODLES Loopdy-Loos according to package instructions.
Meanwhile, in a blender or food processor, blend the peas, basil, lemon zest & juice, garlic, olive oil, and salt & pepper until smooth.
Strain the pasta, making sure to save about ½ a cup of pasta water.
Add the pesto to the cooked noodles along with ¼-½ of a cup of the pasta water. Mix until you reach your desired consistency.
Fry the panko on medium heat in a small pan with a drizzle of oil. Continue stirring until the breadcrumbs are golden.
Top the pasta with the crispy prosciutto and panko. Enjoy!
