Sauce
1/2 cup mayo
2 tablespoons prepared horseradish
1 tablespoon ketchup
1 tablespoon mustard
1 teaspoon honey
1 teaspoon hot sauce
1 teaspoon cider vinegar
Rings
2 large onions (you will have a lot of onion leftover)
1 cup flour
1/2 cup cornstarch
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 teaspoon paprika
1 cup beer
1/4 cup vodka
oil for frying

1 box Goodles Hoppy If You Know It Mac and Cheese, cooked to package instructions

Make the sauce- mix all the sauce ingredients in a bowl and set aside in the fridge until ready to use.
Slice the onion rings and keep only the largest and widest middle rings and some of the bottom ones that are bowl-shaped. You only need 3 of the small bowl shape, 3 middle-sized, and 3 large ones, but you should make extra just in case.
Make sure to peel any of the little onion skin membranes stuck to the inside of the rings.
Mix the flour, cornstarch, salt, baking powder, baking soda, and paprika in a bowl. Stir in the beer and vodka. Stir and add more liquid if needed to create a thin batter.
Preheat frying oil to 375.
In small batches based on how big your fryer is, add the rings and fry for about 1 minute per side until crispy. Remove from the fryer onto a cooling rack and season immediately with salt.
Stack up the rings starting with the small one, then a medium, and then a large one to form your bowl.
Pour the mac and cheese inside, then top with sauce and scallions. Serve and enjoy!
