Mushroom, Goat Cheese & Herb Loopdy-Loos

2 tablespoons olive oil
8 oz. Baby Bella Mushrooms (or your favorite mushrooms), cleaned and sliced
1 box GOODLES Loopdy-Loos pasta
1/2 teaspoon salt
3 cloves garlic, sliced thin
2 tablespoons butter
1/2 cup chopped fresh parsley
1 tablespoon chopped fresh oregano
4 oz. goat cheese, sliced into rounds
Bring a pot of salted water to a boil
Heat a heavy bottom skillet with the olive oil and add the mushrooms. Cook about 10 minutes till browned on all sides.
Drop the pasta into the water just after adding the mushrooms to the pan. Stir and cook about 8-10 minutes until al dente.
Add the salt, butter, and garlic to the mushrooms. Cook and stir for 2 minutes.
Add about 1/2 cup of the pasta cooking liquid to the mushroom pan, then use a slotted spoon to transfer the pasta from the water directly to the mushrooms.
Stir the pasta to combine and remove from heat. Stir in the herbs and goat cheese until the cheese melts into the pasta. Add more pasta cooking water if needed.
