Ingredients:

1 box Gluten-Free Twistful Thinking

1 large beetroot, cooked and peeled

1 cup ricotta cheese

Salt and pepper to taste

Fresh herbs for garnish (such as dill or parsley)

Directions:

  • Cook pasta according to package instructions until al dente.

  • In a blender, blend cooked beetroot with ricotta until smooth.

  • Toss the cooked pasta with the beetroot ricotta sauce. Season with salt and pepper to taste.

  • Serve garnished with fresh herbs.
