Ingredients:
2 strips of bacon, chopped
1/2 of an onion, diced
1/2 of red bell pepper, diced
2 tablespoons butter
1 cup cherry tomatoes, cut in half
1/2 cup frozen edamame beans
2 tablespoons cider vinegar
2 tablespoons minced parsley
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
Instructions:
Boil the pasta according to the package instructions. Drain the pasta, reserving 2 tablespoons of the pasta water. Set aside until ready to use.
Preheat a large heavy bottom pan over medium heat. Add in the bacon and cook until crisp, about 5 minutes.
Add in the onion and bell pepper. Next, add the pasta and stir to combine. Turn the heat to low.
Add the butter, tomatoes, and beans and stir until the butter is melted.
Add in the cheese packet, reserved pasta water, vinegar, parsley, garlic powder, and paprika. Stir to combine and remove from heat.
Serve.
