Ingredients
4 slices thick cut bacon
1 pound brussels sprouts, trimmed and quartered
1 teaspoon freshly cracked black pepper
1 cup grated Pecorino Romano Cheese
Instructions
Bring a pot of heavily salted water to a boil over high heat and drop the pasta in. Stir and simmer until cooked, about 10 minutes. Just before straining, reserve 1/2 cup of the past cooking liquid.
As the pasta starts cooking, bring a large heavy bottom pan to medium high heat. Add the bacon and stir.
Cook until the bacon has rendered a lot of bacon fat and is almost getting crispy. Turn the heat to high and add in the brussels sprouts.
Cook for about 8 minutes, stirring occasionally, to slightly char the brussels sprouts.
Turn heat to low and add the pasta along with the reserved pasta water and black pepper. Stir to combine.
Remove from heat and stir in the cheese. Continue to stir until the cheese is combined. Serve with more cheese on the side.
