Brussels Sprouts and Bacon Curveballs

Ingredients

  • 1 box GOODLES Curveballs

  • 4 slices thick cut bacon

  • 1 pound brussels sprouts, trimmed and quartered

  • 1 teaspoon freshly cracked black pepper

  • 1 cup grated Pecorino Romano Cheese

Instructions

  • Bring a pot of heavily salted water to a boil over high heat and drop the pasta in. Stir and simmer until cooked, about 10 minutes. Just before straining, reserve 1/2 cup of the past cooking liquid.

  • As the pasta starts cooking, bring a large heavy bottom pan to medium high heat. Add the bacon and stir.

  • Cook until the bacon has rendered a lot of bacon fat and is almost getting crispy. Turn the heat to high and add in the brussels sprouts.

  • Cook for about 8 minutes, stirring occasionally, to slightly char the brussels sprouts.

  • Turn heat to low and add the pasta along with the reserved pasta water and black pepper. Stir to combine.

  • Remove from heat and stir in the cheese. Continue to stir until the cheese is combined. Serve with more cheese on the side.
