Lucky Penne with Creamy Butternut Squash and Tahini Sauce

takes 40 minutes

serves 2

Ingredients:

2 tablespoons butter (real or non-dairy)

1/4 cup diced onion

5 cloves garlic, cut in half

2 teaspoons Cajun seasoning

1 cup vegetable stock

1 cup milk (real or non dairy)

3 cups diced butternut squash (half of one large squash or one very small squash)

1 box GOODLES Lucky Penne

1/4 cup tahini

Chili crisp

Fresh oregano

Instructions:

  1. Preheat a pot over medium heat and add the butter to melt. Stir in the onions and garlic and cook for 5 minutes. Stir in the Cajun seasoning. 

  2. Add in the broth, milk, and squash and bring to a simmer. Turn to low and cover. Cook for about 30 minutes until the squash is tender. 

  3. Meanwhile, bring a pot of water to a boil and cook the Lucky Penne according to package instructions. When the pasta is almost done, reserve 1/4 cup of the pasta cooking liquid. Strain the pasta and hold until ready to use. 

  4. When the squash is tender, use a hand blender to blend the mixture until smooth.

  5. Add the cooked pasta and pasta cooking liquid to the pot. Stir in the tahini.

  6. Serve and garnish with chili crisp and oregano.
