Bruschetta Pasta with Gluten-Free Twistful Thinking

serves 4-6

2 boxes GOODLES Gluten-Free Twistful Thinking

1lb colourful cherry tomatoes

1 diced red onion

4 minced garlic cloves

⅓ cup chopped basil

¼  cup extra virgin olive oil

¼ cup Balsamic vinegar

Salt & pepper to taste

1 cup Mozzarella balls

Parmesan (for garnish)

Balsamic glaze (for garnish)

Instructions:

  1. Begin by getting your prep out of the way: slice your cherry tomatoes in half, dice your red onion, mince your garlic, and slice the basil.

  2. In a large bowl combine the cherry tomatoes, red onion, garlic, basil, evoo, balsamic vinegar, and salt & pepper in a bowl. Mix well and set aside to marinate while your pasta cooks.

  3. Bring a pot of salted water to a boil and add the pasta. Cook until al dente, strain, and add to the bowl, along with the mozzarella balls. Mix well and garnish with as much parmesan and balsamic glaze as desired. Enjoy!
