INGREDIENTS
1 tablespoon olive oil
⅓ lb of Italian sausage
1/2 cup diced onion
1/4 cup diced celery
1/4 cup diced carrot
3 cloves garlic, sliced thin
1 cup crushed tomato from a can
4 cups chicken broth
1/2 cup great northern beans
1/2 cup small red beans
1/2 cup grated parmesan cheese, plus more for garnish
1/4 cup chopped parsley, plus more for garnish
INSTRUCTIONS
Preheat a medium saucepan over medium heat with the olive oil and add in the sausage, onion, celery, and carrot. Cook for about 8 minutes until the sausage is cooked through and has rendered its fat, and the veggies have softened and reduced in size.
Add in the garlic and cook for 2 minutes until fragrant.
Add in the tomatoes and broth and bring to a simmer. Reduce heat and simmer for 10 minutes
Meanwhile, bring a pot of water to a simmer and add in GOODLES Curveballs. Cook for about 8 minutes, a few minutes less than suggested on the package.
Strain the pasta and add it to the soup, along with the beans, cheese, and parsley. Bring to a simmer and cook for 5 minutes.
Serve with extra cheese and parsley!
